Ingredients:
1 whole garlic bulb
1/2 teaspoon olive oil
2 tablespoons butter, cubed
2 medium onions, halved and thinly sliced
Salt and coarsely ground pepper to taste
1/3 cup mayonnaise
1 1/3 pounds ground beef
1 1/3 cups North Country Blue Cheese Crumbles (8 ounces)
8 bacon strips, cooked and crumbled
4 slices (1 ounce each) North Country Colby Cheese
4 hamburger buns, split
4 lettuce leaves
Barbecue sauce
Instructions
Heat oven to 400°F.
Remove papery outside from garlic (keeping cloves together). Cut off the top third of garlic bulb; place bulb on a square piece of aluminum foil. Drizzle with olive oil. Wrap tightly with foil.
Bake for 35-40 minutes or until garlic is tender. Cool for 15 minutes; squeeze garlic into a small bowl. Mash with a fork; set aside 2 tablespoons garlic. Save any remaining garlic for a different recipe.
Meanwhile, melt butter in a heavy, large skillet over medium-high heat. Add onions; cook for 10 minutes, stirring frequently. Reduce heat to medium-low. Cook for 20-25 minutes longer or until onions are golden brown, stirring occasionally and adding butter as necessary. Season with salt and pepper to taste. Remove onions from the pan; keep warm.
Combine mayonnaise and 1 tablespoon reserved garlic. Cover and refrigerate until serving.
Heat grill to medium.
Crumble beef over remaining garlic in a large bowl; mix just until combined. Divide beef mixture into eight portions; shape into balls. Form into patties, each about 1/4-inch thick. Place blue cheese in the center of four patties. Sprinkle with bacon. Top with remaining patties; press meat edges to seal.
Grill burgers, covered, over medium heat for 5-8 minutes on each side or until a thermometer inserted into patties reads 160°F. Top with Colby. Cover and cook 1-3 minutes longer or until cheese is melted.
Spread bun bottoms with mayonnaise mixture; top with lettuce, burgers, onions and barbecue sauce. Replace bun tops.
